Suto Aloo Bazi (Baby Potatoes Dish)


This is my mum's recipe - a Great Winter Warmer! Tastes even better if you use home grown/organic potatoes.  Add chopped chillies if you like a little heat!

Serves: 4-6
Preparation/Cooking Time: 40 minutes

Ingredients:
Approx 30 baby new potatoes washed (not peeled)
2 tbsp oil
3 medium sized onions chopped
2 bay leaves washed
1 tsp salt
½ heaped tsp haldi (turmeric) powder
1 heaped tsp dhaniya (coriander) powder


2 tbsp roughly chopped fresh coriander leaves (which is missing from mine!)

Preparation:
1. Place potatoes with skins intact into steamer. I find, steaming with skins intact releases more flavour.  Steam potatoes for approx 10 minutes or until steamed through (but not too soft/mushy).

2. Meanwhile, heat oil in frying pan on medium flame/setting.
3. Tear the bay leaves into large pieces or in half and add to the oil.
4. Almost right away, add the chopped onions and sauté for 1 minute.

5. Add salt, haldi & dhaniya and stir well.  Cover over low flame/setting for approx 20 minutes.



6. Periodically, uncover the pan (dropping the sweat in lid into the onion mixture to keep it moist), stir & then cover again.  The onions will reduce in size and darken to a golden brown/burgundy colour when they are ready for step 9.


7. Meanwhile, check on the potatoes. Once they've steamed through, remove from the heat. To save time, you may need to soak them in lukewarm water before peeling, but I prefer to leave them standing to cool naturally.)


 

8. Once you can handle them, peel the skins off and chop into thick disc shapes. (You have the option of leaving skins on for more fibre!)


9. Add potatoes to the onion mixture and stir well, making sure the potatoes are evenly
coated with the spicy mixture. Cover and cook over the lowest flame/setting for a further 10

minutes to allow potatoes to soak up the spices.




10. Add the freshly chopped coriander leaves and stir through.  Remove from heat. (We ran out of fresh coriander, but it still tasted great! Adding coriander not only brings more depth to the taste, it adds more colour, making it look even more YUM!)


Enjoy with rice or on its own (as done in our household) or serve with bread, salad or quinoa!
