Mushroom Omelette



I eat a lot of low carb food and exercise at least three times a week to maintain a healthy weight for my short stature – it’s a lifestyle not a diet!  Most mornings I eat an omelette which can sound boring but not one omelette is the same as the previous one – there are so many things you can throw in to make it interesting, tasty and filling. 

If you’re worried about consuming 2 eggs, just add the white of the 2nd egg to the mixture or reduce the other ingredients if you decide to use 1 egg.





Mushroom Omelette

Serves: 1
Prep/Cooking Time: 10 minutes
Ingredients:
x2 eggs
x4 mushrooms chopped
Pinch of pepper
Pinch of Chinese five spices
Pinch of crushed chilli flakes
Chopped coriander
½ tbsp coconut oil

Preparation:
Beat the eggs in a bowl.  Add the other ingredients then mix well.  Heat the oil in a pan over moderate heat then add the mixture.

Cover and let one side cook for approx 2-3 minutes.  Lift up a side to check that there is no residue on the pan and it looks golden.

Flip over and cook the other side for the same time or less.  Remove from heat and flip onto plate.
