Roasted Salad


Fancy a change from your usual cold salad? Dad taught me how to prepare this – it tastes great with Sardine Bazi (or any shallow fried fish dish) as well as meat curries.  Some like it hot – I certainly do!


Roasted Salad

Serves: 2

Prep/Cooking Time: approx 15-20 minutes
Ingredients:
7 garlic gloves
1 large onion peeled and halved 
3 ripe tomatoes
1 large green chilli
2-3 pinches chopped coriander
2 pinches salt


Preparation:

Place tomatoes, garlic, onion and chilli on a non-stick pan and roast over low-medium heat with lid.  Tomatoes take a little longer to roast all the way through so check on the other ingredients and remove them to a bowl of plate if they are blackened and soft on all sides.



Gently mash the tomato.  Chop the onion, garlic and chilli and add to tomato.  Finally add the fresh coriander and season with salt.

  
Enjoy it with some plain rice as it is or as an accompaniment for a fish or meat dish.  I especially love eating this with any type of shallow fried fish dish such as Sardine Bazi (see separate recipe).
