Sunny Quinoa & Avocado Salad


As I’ve already raved about quinoa in the ‘quinoa’ post/recipe, I’ll refrain from repeating myself! This is a quick salad I made one sunny afternoon.  Feel free to experiment with different veg, herbs and dressing, but this particular recipe was oh so yummy and oh so healthy!

Quinoa & Avacado Salad
Serves: 3-4
Preparation Time: 10 minutes

Ingredients:
2 avocados
12 cherry tomatoes
3 spring onions
1 baby cucumber
1 cup cooked quinoa
1 cup shredded lettuce
Handful chopped parsley

2 boiled eggs for garnish

Dressing
2 garlic cloves crushed then chopped
1 tbsp olive oil
1 tsp chilli flakes
Pinch sea salt


Preparation:

Combine ingredients for dressing and set aside.

Combine salad ingredients together and mix well.  Add dressing and mix well.

Garnish with slices of boiled egg and serve.

Enjoy on a sunny day, sitting outdoors!
